What’s a Scotch Egg?

Most commonly found in the United Kingdom, Scotch eggs are soft or hard-boiled egg wrapped in sausage meat, coated in bread crumbs and then baked or deep-fried.

A popular picnic food; Scotch eggs are in supermarkets, corner shops, and service stations.

The first publication to print a Scotch Egg recipe is said to be Maria Rundell’s 1809 cookbook, A New System of Domestic Cookery.

People have been enjoying this recipe for 210 years!

Rundell’s recipe is a dinner meal, to be served hot and with gravy. At the time, there was no bread coating. Supposedly, that was added later in 1861 by Isabella Beeton.

Keto Carnivore Scotch Eggs

All vintage Scotch egg recipes call for dredging the meat wrapped egg in wheat flour before deep-frying. This method gives an epic looking result but isn’t suitable for a keto diet and deep-frying it too messy for me to do at home.

I want to make a healthier gluten-free and keto Scotch egg option.

No Pork (but Beef) Scotch Eggs

The first recipe in The Carnivore Cookbook uses ground pork. However, not everyone has access to quality pork or enjoys it.

What can those people do?

My main goal in returning to this recipe was to learn how to make a keto scotch egg with no pork.

I experimented with chicken sausage and fatty ground beef.

They both work!

You can use fatty ground beef (75/25 or fattier) or chicken sausage to wrap the egg.

How to Make Baked Scotch Eggs (Keto, Carnivore, Paleo + Low Carb Approved!)

Baking low carb Scotch eggs is easy! There are only 3 ingredients to consider, so right away you know we have a very simple recipe on hand.

Use soft or hard-boiled eggs for this recipe. The softer the egg, the harder it is to peel. A small spoon can help get the shell off all in one go. Watch this tutorial to see how to peel a boiled egg with a spoon.

Once the eggs are ready, mix the salt into the meat by hand. Then divide the meat into 12 equal portions work each of those out into a thin round patty. Arrange them on a baking sheet lined with parchment paper.

Take an egg and place it in the center of each round. Pick it up and hold in the palm of your hand. With your free hand, shape and mold the meat around the egg. Pinch and press until the meat covers the egg evenly.

Bake for 10-15 minutes in a preheated oven at 350°F (175°C). The top should look cooked. Flip over and continue baking for another 10 minutes. For a crispier shell, finish under the broiler for 5 minutes.

I only added salt to the meat and that was perfect for me. If you want to add your favorite seasoning like rosemary or garlic powder, combine up to 1 teaspoon per herb added with the meat before wrapping the egg.

Ditch the Carbs has a nice Paleo Scotch egg recipe with pork that’s also carnivore diet-friendly. She suggests adding a pinch of sage and rosemary.

Eggs are widely available, affordable, and a great fiber-free source of healthy animal-based protein and fat. Eggs are perfectly acceptable on a carnivore diet, especially when paired with meat!

Is pork ok on a carnivore diet?

There’s nothing inherently wrong with pork on a carnivore diet. Although most people find they do better prioritizing beef and ruminant meat (sheep, goat, bison, etc) over pork and chicken. Pork is best enjoyed in low to moderate amounts.

Take a look at all the delicious foods to eat on a carnivore diet, there may be more than you think!

If you prefer to make carnivore approved Scotch eggs with pork, simply follow this recipe but use ground pork instead of group beef. It’s that easy!

Ingredients

  • 2 pounds ground beef or chicken sausage
  • 2 tablespoons salt
  • 12 large hard boiled eggs

Instructions

  • Preheat the oven to 350 °F (175°C).

  • Line two small rimmed baking sheets with parchment 
paper.

  • Combine beef (or chicken) and salt in a large bowl. Use your 
hands to mix the ingredients together and form into 12 meatballs. Place 6 meatballs on each of the lined baking sheets and press flat.

    2 pounds ground beef, 2 tablespoons salt

  • Place one boiled egg in the middle of each circle of meat and wrap the meat around the egg, leaving no gaps or holes.

    12 large hard boiled eggs

  • Bake for 10-15 minutes. The top should look cooked. Flip over and continue baking for another 10 minutes. For a crispier shell, finish under the broiler for 5 minutes.
